A Quick & Easy Cookie Recipe Made With Just 5 Ingredients!

If you’re looking for the best easy cookie recipes, these snickerdoodles are incredibly simple to make with a box of Betty Crocker yellow cake mix– NO butter or cream of tartar! You’re simply going to combine the cake mix with eggs and oil, and then coat your cookie dough balls in lots of cinnamon and sugar. Your entire family will love these soft and delicious cookies.

They are especially yummy around the holidays when you’re ready to treat yourself with a cup of hot coffee, fuzzy pajamas and something sweet to eat. I make them every year for both Thanksgiving and Christmas.

You should get about 2 dozen cookies with just a few cheap ingredients that you probably already have on hand, so they are perfect for large gatherings, parties, gifts and cookies exchanges.

Easy Cake Mix Snickerdoodles Recipe

  • 1 box yellow cake mix
  • 2 eggs
  • 1/2 cup oil
  • 1/4 cup sugar
  • 1 tbsp ground cinnamon

Quick & Easy Cake Mix Cookies -- Snickerdoodles! Made with just a few ingredients including Betty Crocker yellow cake mix. So simple and tasty!

Instructions

  1. Simply combine the dry cake mix with the oil and eggs, and chill the dough for about an hour.
  2. Once the dough is cold and firm, preheat your oven to 350 degrees and line 2 large baking sheets with parchment paper.
  3. Shape your dough into about two dozen 1 inch balls, and then roll them around in the cinnamon and sugar mixture.
  4. Place them onto your baking sheets giving them plenty of room to spread.
  5. Bake for 8-10 minutes (or until done).

Helpful Tips For Making The Best Cake Mix Cookies

  • Refrigerating the dough is optional, but it keeps the cookies from spreading as much, so they are more fluffy than flat. The dough is also firmer and easier to work with.
  • Do NOT over bake the cookies! They should still be very soft when you pull them out of the oven as they will continue to bake for a minute or two on the hot baking sheet. The cookies are done when the edges are a very light golden brown and the middle is still squishy.
  • Just about every cake mix cookie recipe has the same ratio of ingredients: simply mix the dry cake mix with 2 eggs and 1/2 cup of oil. You can use any flavor of cake mix that you’d like with the mix-ins of your choice. There are so many yummy possibilities.

Cake mix cookies have become very popular, not just because of how easy they are to make, but the cookies always turn out SO SOFT. I’ve made them several ways with a variety of mix-ins, and they always turn out perfect. For this reason, I almost always have yellow cake mix handy in the pantry for last minute treats.

Ingredients
  • 1 box Betty Crocker yellow cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup sugar
  • 1 tbsp ground cinnamon
Instructions
  1. In a large bowl, combine the dry cake mix, eggs and oil until well incorporated.

  2. Refrigerate the dough for about an hour (optional but they won't flatten as much if you chill the dough first).

  3. Preheat your oven to 350 degrees and line two large baking sheets with parchment paper.

  4. In a small bowl, mix together the cinnamon and sugar.

  5. Shape the dough into about two dozen 1 inch balls, then roll them around in the cinnamon-sugar mixture.

  6. Place the dough balls onto your baking sheets, giving them plenty of room to spread.

  7. Bake for 8-12 minutes or until done. Don't over bake them! The cookies should still be very soft when you take them out of the oven.
