The beauty about these 4 ingredient chicken bites is that the Cheez-Its provide the delicious cheesy taste as well as the crunch everyone wants in a chicken finger, and the ranch seasoning gives it all the flavor it needs.You simply crush the crackers in a large Ziploc bag with a rolling pin. This is fun stuff!
Serve these little chicken bites as an after school snack, appetizer, lunch or even for dinner with ranch dressing for dipping. Don’t forget to add a little fiber in there with carrot sticks, celery or anything else that goes well with ranch.

You will only need 4 simple ingredients for this unique chicken recipe: chicken, cheez-its, ranch seasoning mix and buttermilk.
1Start by cutting the chicken into bite sized pieces. Then mix together a packet of ranch seasoning mix with 2 cups of buttermilk. Marinate the chicken in the buttermilk mixture for at least 1 hour.
2While the chicken is marinating, place about 4 cups of Cheez-Its in a large Ziploc bag and crush the crackers into little crumbs.
3Preheat your oven to 400 degrees. Dip each piece of buttermilk ranch soaked chicken into the cracker crumbs, and then place them on a parchment lined baking sheet. Bake for about 20 minutes or until the chicken is cooked through.
Serve with ranch dressing for dipping. 🙂

- 2 chicken breasts (cut into bite-sized pieces)
- 2 cups buttermilk
- 1 packet ranch seasoning mix
- 4 cups Cheez-It crackers

In a large bowl, mix together the buttermilk and entire packet of ranch seasoning mix.

Place the chicken in the bowl and coat well. Marinate in the refrigerator for at least one hour.

Meanwhile, place the cheese crackers in a large Ziploc bag and crush them with a rolling pin until you have crumbs. The smaller, the better!

Preheat your oven to 400 degrees.

Completely coat each piece of chicken in the cheese cracker crumb mixture and place them on a parchment lined baking sheet. *See notes

Bake for about 20 minutes, or until the chicken is cooked through.

Serve with ranch dressing for dipping. Yum!
It's best NOT to place the chicken directly into the crumb mixture bag as the crumbs will eventually get soggy, making them difficult to stick to the chicken. Use your fingers to sort of pour the crumbs over each piece of chicken over the bag for best results.
