Adding pasta to any salad pretty much makes it a meal. It’s a cheap and easy way to make it go much further! It’s also really filling and delicious. Even my kids gobble it up, which is NOT an easy task any time the word “salad” is used. Essentially, you could do this with just about any salad and you’ve got a simple vegetarian and healthy meal everyone will love.
This yummy pasta salad is also an excellent idea for BBQ’s, potlucks, parties, or family gatherings. It feeds quite a crowd! Plus, the pasta can be made and chilled the day before so it only takes a few minutes to throw together.

If you buy the bagged pre-cut and washed lettuce and store-bought caesar dressing, this recipe is a breeze! The hardest part is cooking the pasta which only takes about 10 minutes, but it can be made ahead the day before if you’re really short on time or just like to do your all of your meal prep on Sundays to free up your week.
Be sure to toss with a good quality caesar dressing. It makes all the difference! I like the LiteHouse brand.
Pasta & Avocado Caesar Salad (Easy Vegetarian Dinner Recipe)
Ingredients
- 1 bag chopped romain lettuce
- 1/2 lb fusilli pasta (cooked)
- 1/2 cup caesar salad dressing (or more)
- 1 avocado (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup grated parmesan cheese
- croutons (optional)
Instructions
- Cook the pasta according to the package directions. Drain and rinse with cold water; set aside.
- Toss everything together in a large bowl with a generous amount of caesar dressing (top with croutons just before serving).
- Serve and enjoy!
