Do you have picky eaters to cook for? It’s not easy making everyone happy at dinner time, especially if you have kids that would prefer eating a bowl of chips for dinner. This yummy casserole is so simple to make with a handful of budget ingredients, kid approved, serves a large family, and is amazing comfort food your picky eaters will gobble up. A TOTAL WIN in my house!

Ingredients Needed
- 1 stick butter
- 4 cups shredded chicken (I use rotisserie)
- 1 (12 ounce) bag frozen mixed vegetables
- 1 (11.36 ounce) box Red Lobster Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1 (14.5 ounce) can chicken broth
- 1 (10.5 ounce) can cream of chicken soup
- seasoning to taste
Step 1Grease the sides of a large 9×13 baking dish and pour ½ cup melted butter onto the bottom. Add the shredded chicken in a single layer over the butter.
Step 2Layer the frozen mixed veggies over top of the chicken and then sprinkle with the seasoning of your choice. I use garlic powder, onion powder, and black pepper. Go easy on anything salty as the rest of the ingredients in this casserole already contain salt.
Step 3In a medium size bowl, whisk together the Red Lobster Biscuit Mix and the seasoning packet that comes with it with 2 cups of whole milk. Pour the mixture evenly over the frozen veggies. DO NOT STIR.
Step 4In the same bowl, whisk together the can of chicken broth and cream of chicken soup. Pour evenly over the biscuit mix. DO NOT STIR.
Step 5Bake, uncovered, in the center rack of a 375° F oven for 55-65 minutes or until a deep golden brown. Remove from the oven and allow it to rest for about 10 minutes so that the sauce can thicken a bit.
This yummy recipe reminds my family of a classic chicken pot pie in the form of a casserole, making serving a crowd a little easier. Easy Chicken Cobbler Dinner Casserole
Equipment
- ½ cup butter (1 stick melted)
- 4 cups shredded chicken (I use rotisserie)
- 1 (12oz) bag frozen mixed vegetables
- 1 (11.36oz) box Red Lobster Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1 (14.5oz) can chicken broth (about 2 cups)
- 1 (10.5oz) can cream of chicken soup
- seasoning to taste (I use garlic powder, onion powder, and black pepper)
Instructions
- Preheat oven to 375° F and grease the sides of a large 9x13 baking dish.
- Melt the butter and spread it evenly onto the bottom of your prepared dish.
- Add shredded chicken in a single layer over the butter.
- Next, place the frozen vegetables evenly over the chicken and sprinkle with your desired seasonings. I use garlic powder along with onion powder and black pepper. Go easy on any additional salt.
- In a medium size bowl, whisk together the milk, Cheddar Bay Biscuit Mix, and the seasoning packet that comes with the mix; pour evenly over the chicken and frozen veggies. DO NOT STIR.
- In the same bowl, whisk together the cream of chicken soup and can of chicken broth. Pour evenly over the biscuit mix. DO NOT STIR.
- Bake uncovered in the center rack for 55-65 minutes or until a deep golden brown. It takes the full 65 minutes in my oven, but check on it beforehand as every oven varies.
- Remove from the oven and allow it to rest for about 10 minutes before serving so that the sauce can thicken.
Notes
- Want to make it cheesy? Sprinkle on a cup or two of shredded cheddar over the frozen veggies before pouring the biscuit mix over top.
- You really want to allow this casserole to cook for as long as possible so that the biscuit mix has a chance to rise to the top and fully cook. Let it get to a dark golden brown color before pulling it out.
- Because some of the ingredients already include salt, you really don't need to add much depending on your family's preferences.
- I'll bet frozen broccoli would be great in place of the mixed veggies. You could include any of your favorite vegetables!
- I use rotisserie for this recipe because it's easy and flavorful, but any shredded or chopped chicken can be used.
