This classic dinner recipe is a breeze to throw together with just a handful of common pantry staples. Yummy baked chicken and Instant rice casserole made with just a few ingredients for busy school night dinners! A family favorite budget meal.

If you’re looking for easy meals to make for your picky family, you’ve got to add this creamy chicken and rice casserole to your dinner menu!

No Peek Chicken Casserole is a classic dinner recipe that's easy to make for a large family with kids! Simply mix Instant rice with 2 can of cream soup, pour it in a baking dish, top with chicken and onion soup mix seasoning, bake, and you're done!

Ingredients

  • 1½ pounds chicken breast
  • 2 cups Minute Rice (white or brown)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water (use one of the soup cans)
  • 1 envelope Lipton Onion Soup Mix
  • 1 tablespoon butter

Ingredients needed to make classic forgotten chicken recipe, an easy dinner casserole for large families: chicken breasts, Instant rice, cream of chicken soup, cream of mushroom soup, butter, and an onion soup mix seasoning packet.

Step 1 In a medium size bowl, combine two cups of uncooked Instant rice, both cans of creamy soup, and a can of water.

Instant rice and a few cans of cream soup mixed together in a bowl to make a creamy chicken dinner casserole.

Step 2 Place the rice mixture into a generously buttered 9×13 baking dish and then place your chicken breasts directly on top of the mixture.

Step 3 Evenly sprinkle the Lipton onion soup mix over the chicken. You can also add black pepper and other seasonings if you like to doctor up your recipes, but there’s really no need for it! The onion soup mix is packed full of flavor and the soup has plenty of salt.

Step 4Cover the pan with foil and bake in a 350° preheated oven for 1 – 1½ hours or until the chicken is cooked through. Be sure to leave the foil on the dish for at least an hour while it’s in the oven in order for the rice to steam and fully cook. I suppose that’s why it’s called no peek chicken!

Forgotten Chicken Casserole with a side of broccoli. A yummy and easy dinner idea for a family with picky kids.

For a quick, healthy side dish, we like to air fry broccoli with a little bit of olive oil and seasoning, but any seasonal veggie would complement this flavorful chicken and rice.

Lazy Day Creamy Chicken & Rice Dinner Casserole

If you're looking for easy family meals to make, this classic chicken casserole belongs on your dinner menu! It's simple to make in one pan with just a few basic pantry staples, and leaves everyone at the dinner table with full bellies.
Prep Time5 minutes mins
Cook Time1 hour hr 30 minutes mins
Course: Main Course
Keyword: chicken casserole, easy dinner ideas, family meals, few ingredients
Servings: 8

Ingredients

  • 1½ pounds boneless skinless chicken breasts
  • 2 cups Minute Rice (white or brown)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water (use one of the soup cans)
  • 1 envelope Lipton Onion Soup Mix
  • 1 tbsp butter

Instructions

  • Preheat oven to 350° F and generously grease a 9x13 baking dish with about 1 tbsp of butter. You can also use cooking spray or oil, but I like the added flavor the butter adds to the rice.
  • In a medium size bowl, combine two cups of uncooked Instant rice, both cans of soup, and a can of water.
  • Pour the mixture into your buttered pan.
  • Place the chicken breasts on top of the mixture and sprinkle them with the envelope of onion soup mix.
  • Cover with foil and bake for 1-1½ hours or until the chicken is cooked through (it also takes at least an hour for the rice to fully cook).

Notes

  • Minute rice cooks a lot fast than regular rice, so keep that in mind when making this dish. If you decide to use regular rice, you'll need to partially precook it first.
  • 1½ pounds of chicken can be anywhere from 2-4 chicken breasts, depending on the size. It takes just over an hour to thoroughly cook in my oven but every oven varies.
  • Once cooked, you can either cut the chicken into individual servings for each member of the family, or go ahead and dice the chicken and mix it in with the rice.
  • Looking for side dish ideas? We love air fried broccoli tossed with bit of olive oil and seasoning, but any seasonal veggie would be a healthy addition to this simple meal.
  • Wondering why this dish has so many names? It's a classic dinner recipe that goes by either "forgotten chicken" or "no peek chicken" because once the foil is placed on the dish, you want to leave it on there and forget about it without peeking so that the rice can fully steam and cook.

Don’t forget to pin and save this easy chicken dinner casserole for later! 🙂
