These oatmeal raisin muffins are incredibly quick and easy to make thanks to a box of Betty Crocker yellow cake mix and other simple ingredients that you probably already have in your pantry. Now, I’m not saying that cake mix is healthy in any way, but the other mix-ins are loaded with fiber and protein. These muffins are basically cupcakes with hidden healthy ingredients that even your picky eaters will gobble up.
This easy cake mix muffin recipe is perfect for breakfast on busy mornings when you’re running out the door. Your kids will also enjoy them as a sweet after-school snack at home, in their lunch boxes, or on-the-go for sports practice. Aren’t muffins just the perfect little snacks?
Easy Moist Oatmeal Raisin Muffins Recipe
- 1 box yellow cake mix (I like Betty Crocker)
- 2 eggs
- 1/3 cup oil
- 2 cups quick oats
- 1 1/3 cup water
- 2 tsps cinnamon
- 1 cup raisins
- 1/2 cup chopped walnuts
Simply mix everything together, and then fold in your raisins and walnuts. Prepare a muffin pan with cooking spray or liners, and then bake in a 350 degree oven for about 20-25 minutes or until a toothpick comes out clean.
These cake mix muffins are incredibly moist and delicious especially with a little bit of butter or cream cheese. You could also add in any other mix-ins that you’d like such as chocolate chips, dried fruit or shredded coconut.

- 1 1/3 cups water
- 2 cups quick oats

- 1 cup raisins
- 1/2 cup walnuts

Preheat your oven to 350 degrees and grease or line a muffin pan with baking cups.

In a large bowl, mix the eggs, oil and water together. Beat in the cake mix, oats and cinnamon until thouroughly combined; fold in the raisins and walnuts.

Evenly scoop the batter into your prepared muffin pan until the cups are about 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean.
