If so, I have the perfect breakfast recipe that will get you out of your breakfast food rut. It’s the most delicious combo of savory sausage and sweet pancakes. This creative breakfast will soon be your family’s favorite Sunday brunch!

Are you ready to get started? You probably already have most of the ingredients at home including pancake mix, breakfast sausage meat, milk, and some shredded cheese. It takes only 5 minuets to prep this easy recipe and 20 minutes to bake the sausage balls. So in less than 30 minutes, you’ll have a happy family with full bellies.

Ingredients
- 2 1/2 cups pancake mix
- 1 pound breakfast sausage (uncooked)
- 2 cups shredded cheese (I used cheddar)
- 1/4 cup milk
- Plus some syrup or jelly for dipping

How To Make Pancake Sausage Balls
- Add the pancake mix, uncooked breakfast sausage, shredded cheese, and milk into a mixing bowl.
- Use a stand mixer to mix all the ingredient together for about 1 minute. If you don’t have a stand mixer you can use a spoon or your hands, just make sure all the ingredients are mixed evenly.
- Use a cookie scoop or spoon to make little sausage balls and place them on a parchment paper lined baking sheet. I put about a 1 inch space between all of the sausage balls.
- Preheat oven to 350° F and bake the pancake balls for 20 -25 minutes or until golden brown on top. Serve with syrup or jelly for dipping!

Ingredients
- 2½ cups pancake mix (any brand will work)
- 1 pound breakfast sausage (uncooked)
- 2 cups freshly shredded cheddar cheese
- ¼ cup milk
- syrup for dipping
Instructions
- Preheat oven to 350° F and line a large baking sheet with parchment paper.
- Add the dry pancake mix, uncooked sausage, shredded cheese, and milk into a mixing bowl.
- Mix all ingredients using a stand mixer, spoon, or your hands until mixed evenly.
- Using a cookie dough scoop or spoon, form small balls and place them about an inch apart on your prepared baking sheet. I made 28 total.
- Bake for 20-25 minutes or until they are cooked through and golden brown on top.
- Serve warm with syrup and ENJOY!
Notes
- The pancake mix will be used DRY, no need to make the batter.
- Double the recipe and store uneaten pancake sausage bites in the freezer for up to 3 months. When ready to eat, defrost overnight in the refrigerator and reheat in the microwave for 30 second intervals until warm.
- I like to use a block of cheddar cheese and shred it myself. It tastes so much better than pre-shredded cheese and holds together better when baking.
- If you don't have parchment paper for your baking sheet, make sure to grease the baking sheet with cooking spray before using.
