Pancake Sausage Balls

A fun and easy breakfast idea using just pancake mix, sausage meat, shredded cheese, and milk.

“What am I going to make for breakfast” she says for the 10,000th time. It always seems to be the same. Cereal, oatmeal, toast, repeat. Does this sound familiar? If so, I have the perfect breakfast recipe that will get you out of your breakfast food rut. It’s the most delicious combo of savory sausage and sweet pancakes. This creative breakfast will soon be your family’s favorite Sunday brunch!

Pancake Sausage Balls are a quick and easy breakfast that kids and adults will love! They are great for special occasions and a casual morning at home.

Are you ready to get started? You probably already have most of the ingredients at home including pancake mix, breakfast sausage meat, milk, and some shredded cheese. It takes only 5 minuets to prep this easy recipe and 20 minutes to bake the sausage balls. So in less than 30 minutes, you’ll have a happy family with full bellies.

Pancake sausage balls dipped in syrup make the best breakfast ever. This sausage bite recipe is so simple with just 4 ingredients you may already have at home. Make a double batch and freeze some for those busy mornings when you need a quick breakfast idea.

Ingredients

  • 2 1/2 cups pancake mix
  • 1 pound breakfast sausage (uncooked)
  • 2 cups shredded cheese (I used cheddar)
  • 1/4 cup milk
  • Plus some syrup or jelly for dipping

How To Make Pancake Sausage Balls

  1. Add the pancake mix, uncooked breakfast sausage, shredded cheese, and milk into a mixing bowl.
  2. Use a stand mixer to mix all the ingredient together for about 1 minute. If you don’t have a stand mixer you can use a spoon or your hands, just make sure all the ingredients are mixed evenly.
  3. Use a cookie scoop or spoon to make little sausage balls and place them on a parchment paper lined baking sheet. I put about a 1 inch space between all of the sausage balls.
  4. Preheat oven to 350° F and bake the pancake balls for 20 -25 minutes or until golden brown on top. Serve with syrup or jelly for dipping!

Combine, stir, scoop, and bake. That's all you need to do for this easy to make breakfast idea. Sausage pancake bites are crispy on the outside and delicious on the inside, making these the perfect breakfast.

This really is the best family friendly breakfast! It’s so simple to make and everyone always gobbles them up. I like to make a double or triple batch and freeze the leftovers. This way I always have a few to pop in the microwave on a busy weekday morning.

Ingredients

  • 2½ cups pancake mix (any brand will work)
  • 1 pound breakfast sausage (uncooked)
  • 2 cups freshly shredded cheddar cheese
  • ¼ cup milk
  • syrup for dipping

Instructions

  • Preheat oven to 350° F and line a large baking sheet with parchment paper.
  • Add the dry pancake mix, uncooked sausage, shredded cheese, and milk into a mixing bowl.
  • Mix all ingredients using a stand mixer, spoon, or your hands until mixed evenly.
  • Using a cookie dough scoop or spoon, form small balls and place them about an inch apart on your prepared baking sheet. I made 28 total.
  • Bake for 20-25 minutes or until they are cooked through and golden brown on top.
  • Serve warm with syrup and ENJOY!

Notes

  • The pancake mix will be used DRY, no need to make the batter. 
  • Double the recipe and store uneaten pancake sausage bites in the freezer for up to 3 months. When ready to eat, defrost overnight in the refrigerator and reheat in the microwave for 30 second intervals until warm.
  • I like to use a block of cheddar cheese and shred it myself. It tastes so much better than pre-shredded cheese and holds together better when baking.
  • If you don't have parchment paper for your baking sheet, make sure to grease the baking sheet with cooking spray before using.
