Ingredients
2½cupspancake mix(any brand will work)
1poundbreakfast sausage(uncooked)
2cupsfreshly shredded cheddar cheese
¼cupmilk
syrup for dipping
Instructions
Preheat oven to 350° F and line a large baking sheet with parchment paper.
Add the dry pancake mix, uncooked sausage, shredded cheese, and milk into a mixing bowl.
Mix all ingredients using a stand mixer, spoon, or your hands until mixed evenly.
Using a cookie dough scoop or spoon, form small balls and place them about an inch apart on your prepared baking sheet. I made 28 total.
Bake for 20-25 minutes or until they are cooked through and golden brown on top.
Serve warm with syrup and ENJOY!
Notes
The pancake mix will be used DRY, no need to make the batter.
Double the recipe and store uneaten pancake sausage bites in the freezer for up to 3 months. When ready to eat, defrost overnight in the refrigerator and reheat in the microwave for 30 second intervals until warm.
I like to use a block of cheddar cheese and shred it myself. It tastes so much better than pre-shredded cheese and holds together better when baking.
If you don't have parchment paper for your baking sheet, make sure to grease the baking sheet with cooking spray before using.
