How to make deliciously moist banana bread with a box of yellow cake mix!
This recipe may sound too good to be true, but this easy way of making banana bread is surprisingly GOOD! You would never guess it’s made with just cake mix, mashed bananas, and eggs. You can, of course, also include chopped nuts or chocolate chips for added flavor and crunch.
Easy Cake Mix Banana Bread Recipe
- 1 (13 ounce) box yellow cake mix
- 3 very ripe bananas
- 2 large eggs
- chocolate chips or nuts for topping (optional)
Simply smash the bananas and mix with the eggs along with the entire box of dry cake mix. It’s OK if the bananas still have a few chunks left in them. This will actually add a nice texture to the bread.
Generously grease TWO bread loaf pans and then divide the batter evenly between both pans. The batter should be thin enough to pour into the pans and then you can simply use a large spatula to scape the sides of the bowl.
Next, optionally top with chocolate chips or chopped nuts such as walnuts or pecans. You could also sprinkle with a bit of cinnamon or even top with a few extra banana slices. I prefer not to fold the mix-ins into the batter, but you could also try that. Make it your way!
Bake on the center rack of a 350° F oven for 25-35 minutes or until a toothpick comes out clean. In my metal loaf pans, this takes exactly 25 minutes in my oven. It might take longer in glass or ceramic pans.

Instructions
- Preheat oven to 350° F and grease two bread loaf pans.
- In a medium or large bowl, mash the bananas with a fork and then mix with the eggs and box of DRY cake mix.
- Evenly divide the batter between both bread pans and then optionally top with chocolate chips or chopped nuts (or both!).
- Bake in the center rack of your oven for 25-35 minutes. In my metal pans, this takes exactly 25 minutes. It might take longer if you're using glass or ceramic pans.
Notes

- Serve alone, with butter, or softened cream cheese if you're feeling fancy.
