Butter Swim Roasted Potatoes

A family favorite side dish for dinner!

This simple comfort food is not only quick and easy to make with just a few basic ingredients, it’s absolutely incredible. These yummy mini potatoes pair well with chicken, steak, bbq, and just about anything else you have planned for dinner. My favorite thing about this recipe is the fun way of baking them. They’re literally swimming in melted butter and parmesan cheese!

Once baked, these mini potatoes soak up the butter and get soft in the middle and crispy on the outside.

How to make delicious crispy roasted potatoes with butter and grated parmesan cheese. a delicious comfort food side dish that will impress your family.

Ingredients

  • 1 stick butter (1/2 cup)
  • 1/3 cup grated parmesan cheese
  • 1+ tbsp Montreal steak seasoning
  • 1 pound petite red potatoes
  • non-stick cooking spray

Red potatoes, a stick of butter, a bowl of parmesan cheese, and a yummy seasoning mixture to make butter swim roasted potatoes for dinner.

Instructions

  1. Add a stick of butter to a 9×13 baking dish or large sheet pan.
  2. Place the baking dish in a cool oven.
  3. Turn oven to 400 degrees F and let the butter melt as the oven preheats.
  4. Remove the pan once the butter is melted.
  5. Wash and cut the potatoes in half.
  6. In a small bowl, combine the parmesan cheese with 1 tbsp of Montreal steak seasoning, or you can use any seasoning you have on hand (salt, pepper, garlic powder, herbs, etc.).
  7. Evenly sprinkle the parmesan mixture over the melted butter.
  8. Place the potatoes cut side down onto the pan right on top of the parmesan and seasoning mixture.
  9. Spray the tops of the potatoes with non-stick spray (or brush them with oil) and sprinkle on a little more seasoning.
  10. Bake uncovered in the center rack for 30-40 minutes or until potatoes are tender.

How to make the best potato side dish in your oven! This is the most incredible way to roast red potatoes. Swimming in butter!

Isn’t this fun!? This is my favorite way of roasting potatoes. They get crispy and cheesy on the outer edges with soft and tender insides. Once finished, some of the parmesan in your baking dish may look a little burnt, but no worries! The parmesan crust on the bottom of your potatoes should be cooked to perfection.

A quick and easy side dish for dinner that your family will go crazy for! These crispy yet tender oven roasted potatoes pair well with chicken, steak, or bbq. They're so simple to make with just a few cheap ingredients yet are sure to impress your picky eaters.

  • Bake uncovered in the center rack for 30-40 minutes or until potatoes are tender.

Notes

  • These potatoes can be made in a large baking dish or sheet pan as long as the sheet pan has a big enough lip to contain the butter.
