This easy family dinner only takes about 10 minutes to prepare. Simply chop the celery, mix the gravy packets with water, and then dump everything into your handy, dandy crockpot. Serve over refrigerated mashed potatoes to make it extra lazy!

You can also include the veggies of your choice such as carrots, celery, potatoes, onions, or mushrooms. This yummy dinner is versatile, kid friendly, cheap to make, and a breeze to throw together on busy weeknights.

Plus, you get your protein in without the hassle of grocery shopping! They are a wonderful freezer staple to have on hand, especially if you’re a busy mom or dad with hungry kids to feed.

How To Make A Slow Cooker Pot Roast With Frozen Meatballs

List of ingredients needed to make an easy meatball pot roast: frozen meatballs, carrots, celery, onion soup mix, brown gravy mix, butter, and mashed potatoes.

Ingredients

  • 26 ounce bag frozen meatballs
  • 2 cups baby carrots
  • 5 stalks of celery (chopped)
  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix
  • 2 cups water
  • ¼ cup butter
  • 24 ounces refrigerated mashed potatoes

Step 1In a small bowl or measuring cup, whisk the two packets of brown gravy mix with two cups of water. Place the frozen meatballs, carrots, and celery into your slow cooker and toss with the cold gravy mixture.

This easy and yummy slow cooker dinner recipe is simple to make with just a few budget ingredients! Add the veggies of your choice to make this main dish complete.

Step 2Sprinkle the packet of onion soup mix over the top of the gravy soaked meatballs and veggies. Cut the butter into small pieces and spread them evenly over the top.

Step 3Cook on LOW for 3-4 hours, stirring half way through to make sure everything gets cooked evenly. I like to push the carrots down into the sauce to ensure they get soft.

Easy Frozen Meatball Pot Roast (Slow Cooker Dinner Recipe)

Ingredients

  • 1 (26oz) bag frozen meatballs
  • 2 cups baby carrots
  • 5 stalks celery (chopped)
  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix

  • 1 (24oz) container refrigerated mashed potatoes (or make your own)

Instructions

  • Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker.
  • In a small bowl or large measuring cup, whisk together two packets of brown gravy mix with two cups of water. Pour the cold mixture into your slow cooker and toss with the meatballs and veggies.
  • Sprinkle the packet of onion soup mix over top.
  • Slice the butter into small pieces and evenly place them over the top.
  • Cook on LOW for 3-4 hours, stirring half way through to ensure everything cooks evenly and the butter and seasonings are well incorporated.
  • Just before serving, heat up and prepare the mashed potatoes according to the package instructions. Enjoy!

Notes

  • I used a 26 ounce bag of homestyle frozen meatballs which included about 55 small meatballs, but the amount doesn't have to be exact. The Kirkland brand of frozen meatballs from Costco are our favorite!
  • Instead of mashed potatoes, consider throwing in a few handfuls of baby potatoes or chopped potatoes along with the veggies. They should take about the same time to cook as the carrots.
  • You could also include onions, mushrooms, and optional seasoning like garlic or black pepper.
  • Serve this yummy pot roast over a baked potato or with cooked rice to change it up.
  • Although this main dish doesn't require any sides, crispy garlic bread or dinner rolls are a nice pairing!
