Easy Frozen Meatball Pot Roast (Slow Cooker Dinner Recipe)
Make this delicious dinner recipe on a budget with just a few basic ingredients! Your family is going to love this easy crockpot meal. Simply dump everything into your slow cooker and a few hours later you've got a comforting pot roast that's cheap and easy to make thanks to frozen meatballs.
1(24oz)container refrigerated mashed potatoes (or make your own)
Instructions
Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker.
In a small bowl or large measuring cup, whisk together two packets of brown gravy mix with two cups of water. Pour the cold mixture into your slow cooker and toss with the meatballs and veggies.
Sprinkle the packet of onion soup mix over top.
Slice the butter into small pieces and evenly place them over the top.
Cook on LOW for 3-4 hours, stirring half way through to ensure everything cooks evenly and the butter and seasonings are well incorporated.
Just before serving, heat up and prepare the mashed potatoes according to the package instructions. Enjoy!
Notes
I used a 26 ounce bag of homestyle frozen meatballs which included about 55 small meatballs, but the amount doesn't have to be exact. The Kirkland brand of frozen meatballs from Costco are our favorite!
Instead of mashed potatoes, consider throwing in a few handfuls of baby potatoes or chopped potatoes along with the veggies. They should take about the same time to cook as the carrots.
You could also include onions, mushrooms, and optional seasoning like garlic or black pepper.
Serve this yummy pot roast over a baked potato or with cooked rice to change it up.
Although this main dish doesn't require any sides, crispy garlic bread or dinner rolls are a nice pairing!
