Lazy Enchiladas (Made With Frozen Taquitos)

This quick and easy dinner casserole will soon be a family favorite!

I’ve never been a huge fan of frozen taquitos. They’re usually so dry and bland you have to drench them in sour cream and hot sauce, but I’ve recently had a change of heart! Simply smother chicken or beef taquitos in enchilada sauce and cheese, and you’ve got yourself a simple family meal that everyone will love, even the pickiest of kids. But the best part about this easy recipe, it will probably be the laziest dinner you’ll ever make.

If you're looking for quick and easy dinner recipes for a family with kids, this frozen taquito casserole is the laziest meal you'll ever make! It's so simple to make with just a few cheap ingredients including frozen taquitos, refried beans, enchilada sauce, and cheese! It's perfect for busy moms and dads on a budget with picky eaters to feed. It's basically a dump meal that comes together in less than 30 minutes (most of that being the baking time). The oven does all the work for you!

This is how you turn frozen taquitos from dry and bland to AWESOME.

You may be a little skeptical about this unique recipe, but I would have never guessed these cheesy enchiladas were made with frozen taquitos. They taste like something you’d get at a Mexican restaurant, especially if you serve them with sour cream and a few fresh ingredients like chopped lettuce, tomato, jalapeño, or avocado. You can completely customize them every time!

Lazy Enchiladas! This frozen taquito casserole bake is super quick and easy to make, and your picky family will love it! My kids devour it. It's perfect for a large family, but the leftovers are just as good so you can get two or more meals out of it. This is my favorite cooking hack, especially for busy school nights when I'm too tired to cook and clean. Only one dish required!

Frozen Taquito Enchilada Casserole

  • 20 pack frozen taquitos
  • 1 (16oz) can refried beans
  • 1 (19oz) can enchilada sauce
  • 2 cups shredded cheese
  • sour cream for serving

Frozen Taquito Dinner Casserole | This is basically a lazy way of making enchiladas! It's so easy, anyone can make it, yet it tastes like something you'd get at a fancy Mexican restaurant. Just 4 cheap ingredients for this simple meal: frozen taquitos (chicken or beef), enchilada sauce, refried beans, and cheese. So yummy! My picky eaters love it.

Step 1 Scoop the beans into the bottom of a greased 9×13 baking dish and spread evenly.

How to make lazy enchiladas with refried beans!

Step 2 Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.

How to make frozen taquitos not suck! Smother them in enchilada sauce and cheese to make delicious enchiladas.

Step 3 Pour enchilada sauce over top and bake in a 400 degree oven for 20 minutes.

Step 4 Remove from the oven and evenly sprinkle about 2 cups of shredded cheese over top. I used a Mexican cheese blend this time but cheddar is also a good choice.

Step 5 Place the dish back in the oven for about 5 minutes, or until the cheese is gooey and melted.

Step 6 Enjoy with sour cream or anything else you’d like such as guacamole, chopped lettuce, diced tomatoes, jalapeño, or fresh squeezed lime juice.

Lazy Enchiladas (Frozen Taquito Casserole)

Ingredients

  • 1 (20 pack) frozen taquitos
  • 1 (16oz) can refried beans
  • 1 (19oz) can enchilada sauce
  • 2 cups shredded cheese
  • sour cream (for serving)

Instructions

  • Preheat oven to 400° F and grease a 9x13 baking dish.
  • Scoop the refried beans into the bottom of your dish and spread them out evenly with the back of a large spoon.
  • Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.
  • Evenly pour the enchilada sauce over top and bake for 20 minutes.
  • Remove the dish from the oven and sprinkle with shredded cheese.
  • Bake for an additional 5 minutes, or until the cheese is melted.
  • Enjoy with sour cream and anything else you'd like such as shredded lettuce, fresh tomato, guacamole, jalapeños, etc.

Notes

  • You can also make this with frozen burritos! Full Recipe Here
  • Chicken or beef taquitos in any brand can be used for this recipe, along with the enchilada sauce of choice (red or green). 
  • I used a Mexican cheese blend this time, but shredded cheddar is also a good choice. 
  • The refried beans are optional. Simply skip that step and follow the rest of the instructions.
