I’m always looking for a cheap dinner recipe that is easy to make on busy weeknights, and this cheesy ham and pea casserole is perfect! I make this delicious recipe extra lazy by making it ahead of time and simply throwing it into the oven when we get home. All you do is mix all the ingredients together, top with cheese and bake until bubbly and creamy. This cheesy rice casserole is perfect for picky eaters! Oh so yummy.

Using just a few budget friendly ingredients including instant rice, precooked ham, frozen peas, and a can of cream of chicken soup, you can make a delicious dinner casserole that’s easy to make on busy school nights, even for the laziest of cooks. You could even make it ahead of time and simply pop it in the oven when everyone is ready to eat!

This cheesy dinner casserole is made with just a few simple and cheap ingredients including instant rice, cooked ham, and frozen peas, making it extra lazy for busy weeknight meals. My kids love it! If you have picky eaters to feed, this quick meal is for you. I make it often on busy school nights because I can get several meals out of it. It’s just as good leftover! Ingredients

  • 2 cups cooked rice
  • 2 cups cubed ham (cooked)
  • 2 cups frozen green peas
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 3 cups shredded cheddar cheese
  • Salt, pepper, onion and garlic powder to taste
  • A dash of hot sauce to taste

Step 1 Combine all of the ingredients in large bowl. Reserve one cup of shredded cheese for topping the casserole later.

Step one for making a cheesy rice ham and pea casserole in a 9x13 baking dish.

Step 2 Pour the casserole mixture into a greased 9×13 baking dish and sprinkle the reserved cup of shredded cheese evenly over the top.

Ingredients

  • 2 cups cooked rice
  • 2 cups cubed ham
  • 2 cups frozen green peas
  • 1 can cream of chicken soup (10.5 oz)
  • ½ cup sour cream
  • 3 cups shredded cheddar cheese
  • dash of hot sauce to taste (optional)
  • salt, pepper, onion powder, and garlic powder to taste

Instructions

  • Preheat oven to 350°F and grease a 9x13 baking dish.
  • Combine all ingredients in a large bowl. Reserve one cup of shredded cheese for the top of the casserole.
  • Pour the casserole mixture into your prepared baking dish and sprinkle the remaining cup of cheese evenly over the top.
  • Bake uncovered for approximately 30 minutes or until the casserole is bubbling and the cheese is melted and golden brown.
  • Let cool for 5 minutes. Enjoy!

Notes

  • Make this dish extra lazy by using instant rice and precooked cubed ham.
  • I like to use frozen peas in this recipe because they don't get squishy when baked, but you could use any veggie you'd like.
  • This casserole is perfect to make ahead and freeze. Simply pull it out of the freezer in the morning and it will be ready to bake by dinner time.
  • You could also sprinkle on some breadcrumbs before baking for added crunch and flavor.
  • Don't skip on the hot sauce in this recipe. Adding just a teaspoon will NOT make this casserole spicy but it will add a really yummy flavor!
