Ingredients
8flour tortillas (soft taco size)
1½cupsshredded mozzarella
½cupolive oil
½tspsalt
½tspblack pepper
½tspgarlic powder
1tspItalian seasoning
1-2tbspsgrated parmesan (optional)
Instructions
Preheat oven to 400° F and dig out an 8x8 baking dish from your cabinets.
Fold each tortilla back and forth like an accordion and then place them into your dish stacked snuggly together.
Stuff the folds evenly with about 1 ½ cups of shredded mozzarella cheese.
Whisk or use an immersion blender to combine ½ cup of olive oil with your seasonings (½ tsp salt, pepper, and garlic powder plus 1 tsp of Italian seasoning).
Spoon the mixture evenly over the top of the tortillas and in-between the folds. Use your spoon to stir the mixture regularly as the seasonings tend to settle to the bottom.
Sprinkle the top with parmesan cheese and cover the dish with foil.
Bake for 10 minutes and then remove the foil and bake for an additional 10 minutes or until golden brown and crispy.
Notes
Reheat this tortilla bread in your air fryer for 3-5 minutes and it's just as good as when it was fresh out of the oven.
