Ingredients
2-3chicken breasts(about 1.5 pounds)
1packet chicken taco seasoning(1/4 cup)
2(10oz)cans Rotel diced tomatoes & green chilies
1(15oz)can black beans(drained & rinsed)
1(15oz)can whole kernel corn(drained)
3cupschicken broth
2cupsshredded cheddar cheese
3/4cupheavy cream
Instructions
Place the chicken in the bottom of your slow cooker and evenly sprinkle the taco seasoning over top.
Dump the cans of tomatoes & green chilies, drained and rinsed black beans, and drained corn over the seasoned chicken.
Pour in the chicken broth and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
Remove the chicken breasts from the soup and shred on a cutting board with a few forks. It should be very tender and super easy to pull apart, if not, it's needs a little more cooking time.
Return the chicken back to the soup and stir in the heavy cream and shredded cheddar cheese.
Cook for an additional 30+ minutes, stirring occasionally until the cheese is fully melted and the broth has thickened.
Serve with your favorite toppings! We love tortilla chips, diced avocado, cilantro, as well as a little extra shredded cheese to make it extra gooey.
Notes
My family of four can eat almost all of this soup for dinner with only one serving left for later. I'd recommend doubling the recipe if you're feeding a crowd or would like to have leftovers the next day.
I use the MILD diced tomatoes & green chilies because my daughter is sensitive to spice, but you can opt for the regular or spicy cans as well, or even add your own spice on the side such as cayenne or red pepper flakes.
Any kind of taco seasoning can be used for this easy recipe. I like the McCormick brand of chicken taco seasoning, but you can also use a regular packet of taco seasoning or 1/4 cup of your own homemade seasoning.
Want to make this more like a chili? Add an extra can of beans! Black beans or pinto beans are a good choice. This is also an inexpensive way to make it go a little further.
