Ingredients
2cupscooked rice
2cupscubed ham
2cupsfrozen green peas
1cancream of chicken soup(10.5 oz)
½cupsour cream
3cupsshredded cheddar cheese
dash of hot sauce to taste(optional)
salt, pepper, onion powder, and garlic powder to taste
Instructions
Preheat oven to 350°F and grease a 9x13 baking dish.
Combine all ingredients in a large bowl. Reserve one cup of shredded cheese for the top of the casserole.
Pour the casserole mixture into your prepared baking dish and sprinkle the remaining cup of cheese evenly over the top.
Bake uncovered for approximately 30 minutes or until the casserole is bubbling and the cheese is melted and golden brown.
Let cool for 5 minutes. Enjoy!
Notes
Make this dish extra lazy by using instant rice and precooked cubed ham.
I like to use frozen peas in this recipe because they don't get squishy when baked, but you could use any veggie you'd like.
This casserole is perfect to make ahead and freeze. Simply pull it out of the freezer in the morning and it will be ready to bake by dinner time.
You could also sprinkle on some breadcrumbs before baking for added crunch and flavor.
Don't skip on the hot sauce in this recipe. Adding just a teaspoon will NOT make this casserole spicy but it will add a really yummy flavor!
