This easy pasta dinner is packed full of fresh flavors! It's incredibly fun to make in your oven with a block of feta cheese, olive oil and cherry tomatoes. Toss in any cooked pasta you'd like and enjoy with fresh basil for the most delicious vegetarian meal.
Place the cherry tomatoes in an 8x11 baking dish. Pour the olive oil over top and season with the garlic, salt and pepper. Toss to combine.
Place the block of feta in the middle of the dish so that it's surrounded by tomatoes. Flip it a few times to coat in oil.
Bake for 35 minutes or until the feta cheese is melted and the tomatoes are soft with the juices bursting out.
While the feta and tomatoes are baking, cook and drain the pasta according to the package instructions. Reserve about 1/4 cup of the pasta water in case you'd like to toss some in.
Add the fresh basil to your baking dish with the cooked tomatoes and feta; stir to combine.
Transfer the cooked pasta into your baking dish and toss everything together. Garnish with more basil, fresh cracked pepper, red pepper flakes, or anything else you'd like!

Any kind of pasta can be used for this dish. Choose your favorite!
Want to add some protein? Rotisserie or grilled chicken is a yummy choice.
You can also use whole tomatoes, cut into large chunks, if you'd like, but the cherry tomatoes have the most flavor because you get more of the skin.
