These easy muffins are so simple to make thanks to a box of Betty Crocker lemon cake mix! You'll just need a little butter, milk, eggs and lemon zest. They are perfect for breakfast, yummy on-the-go snacks, lunch boxes and after dinner treats. Kids love them!

Ingredients
1box lemon cake mix
3/4cupsoftened salted butter(1 1/2 sticks)
3eggs
1/2cup milk(2% or whole)
the zest of 1 lemon
Instructions
Preheat oven to 350° F and line or grease a muffin pan with non-stick spray.
In a large bowl, combine the butter, milk, eggs and lemon zest.
Stir in the cake mix until well combined.
Scoop the batter into your prepared muffin pan filling them up about 3/4 full.
Bake for 15-20 minutes or until a toothpick comes out clean.
Notes
You could also add about 2 tablespoons of poppy seeds if you have them on hand.
Blueberries are also wonderful paired with lemon! Stir in about half a cup to the batter before baking.
